Valentine's Day

Oh February... the month of "Love".

The BIG Day:

Matt and I didn't make ANY plans for Valentine's Day. It was pretty much just like every other Monday. Matt got up early and went to his morning class, so we said a quick goodbye while I was still getting ready for work. Then we didn't have lunch together because he had class, and I knew he'd be home late because he had another class after work.

So since it was the national day of Love I decided I was going to surprise him with a magnificent dinner (because let's face it, I'm the best cook ever...RIGHT!---For all those who really know me, I HAVE been learning to cook since my aunt gave me a new cookbook for Christmas and Matt has so much night school.) Anyways, so I searched through Valentine's Day recipes... and those were too hard. So I typed in the website for the Campbell's Cookbook (my new best friend) and found a simple but delicious dish to try.

Then, after reading my friend's blog (she wrote a fantastically hilarious poem for her husband), I was also inspired to write Matt a poem.

So after work, I ran to Target to buy romantical Heart shaped plates and fun V-day striped cups. I also picked up the few items I needed to be able to make my spectacular dinner and I was set.

Matt came home to this:

(The poem is written on the heart. It says: "Roses are Red... Violets are blue... I'm learning how to COOK because I LOVE YOU!"--genius. I know.)

And then a few minutes later this came out of the oven:



And we totally watched ABC's "The Bachelor" while we ate it.-- So Romantical I know.

P.S. Matt was definitely amazed by my poetry writing and cooking skills.

We gave each other our gifts on Saturday. Matt bought me a watch that I LOVE! and I bought him a new belt (which he bought the exact same one on his way home from work that day... don't worry, I'm making him take his BACK!). Oh Accessories!

Say Goobye 2010... Say Hello 2011

With the New Year here, I've been thinking back at the year Matt and I have had together.

2010 gave us our first house.



Matt's college graduation and the beginning of Grad school.

Smart Phones.

Friends getting married, which meant more chances for us to go to the temple.

New jobs.

My 23rd birthday and his 25th.

Lamar Football BACK.



The Institution of Combined FHE. Best idea EVER.

2 years of marriage.



Rolling 100,000 miles in my car.

2010 also brought sadness, loss and frustration, but with that came the joys of family, love, learning, and growth.

We look forward to the new year together and continuing to learn something new everyday in 2011.

Training for a 5K

Warning: this post has NO pictures. I apologize... but there's just something that's not very appealing about a red faced out of breath girl. I know you can thank me later.

Anyways, I'm training for a 5K with my friend. The race is in March. Matt and I have been walking and doing some exercising this week to start training. But, today was the first day my friend and I worked out together. We did pretty well if I do say so myself. Every other 1/4 mile of the trail we jogged and I thought I would die. Thanks to my friend, she kept me from stopping--- because if it was up to me I probably would have walked the whole thing. (I HATE running!!! I have always HATED running!!!, even when I was in shape playing basketball.)

Let's just hope I keep up my training after I go back to work starting on Monday.

I Cooked Dinner...

Yes you read that headline correctly. Yours truly actually cooked dinner... ALL by HERself! I'm amazed myself. Now you can pick your jaw off the floor and keep reading.

My aunt gave Matt and I a Campbell's (as in the soup) Recipe Book for Christmas and today I read through it to find some ideas for dinner. I was running out of time before Matt got home, so I needed something that wouldn't take hours. So I found the perfect quick recipe. It's called Chicken Mozzarella. I quickly checked my cabinets to see what items I needed from the grocery store and in no time I was back in my kitchen, wearing an apron, and cooking.

Here's the finished delicious product:



Matt said it tasted good, but the recipe said to leave the noodles plain, so I did, and Matt wished it had some sauce as well. Maybe I can figure out a way to tweak the recipe for more sauce the next time I make it.

Quick update: We've been pretty busy during our break from work. We had to split our time between my family and his over Christmas Eve and Christmas Day. We enjoyed seeing family and everything. Santa was very nice to us as well. Now we are getting ready for the New Year. I hope all of you had a very Merry Christmas and that you all have a Happy New Year as well!
